Watermelon cooler
This Annabel Langbein recipe is perfect for summer and is very refreshing. I love the combination of fresh mint and watermelon and I’m excited to be able to utilise the fresh herbs from my garden for this recipe. The best thing about watermelon is how cold it is to save you from that summer sun so don’t forget to add the ice!
- ½ large watermelon
- 1½ cups white rum or vodka
- ¾ cup fresh lime juice
To serve
- ice cubes
- finely shredded mint
Cut off the skin, remove seeds and cut watermelon flesh into chunks. Purée the watermelon until smooth, this should make around 6 cups of juice. Add rum or vodka and lime juice to the watermelon and blend until smooth. Half fill a large jug with ice and fill with watermelon mixture. Stir and garnish with mint.
